Basic Sponge

Wooden spoon

1. Mise and place all equipment, stations and stock

2. Beat eggs and sugar together to full ribbon stage

3. Sieve flour

4. Fold in flour into sabayon

5. Fold in coffee powder

6. Bake in steak and kidney dish @ 180˚C

7. Firm to touch
