Sweet Pastry

Heavy duty mixer

1. Mise and place all equipment, stations and stock

2. Sieve flour into mixing bowl

3. Zest lemon

4. Whisk eggs into large mixing bowl

5. Add flour, sugar, lemon zest and salt to eggs

6. Mix until soft dough

7. Spread flour onto clean working station

8. Knee dough

9. Wrap with cling wrap allow to cool and then place in fridge
