Chocolate and Orange Mousse

Moulds for mousse

1. Mise en place all ingredients, equipment, stations and stock

2. Break chocolate into small pieces and melt with butter in double boiler

3. Whisk egg yolks and sugar till almost white and mix with chocolate

4. Carefully fold in the stiffly beaten egg whites

5. Pour into suitable dish or moulds

6. Refrigerate until set

7. Decorate with whipped cream if desired

8. Finish with chocolate run outs shapes and chocolate sauce

9. Can add orange zest after melting process or can be used as garnish
