Pastry Cream

INGREDIENTS

Milk

2 L

Sugar

500 g

Eggs

6 each

Corn flour

125 g

Vanilla essence/pods

1 tsp

Equipment used

Chemicals Used

Stock pot

Multi purpose

Mixing bowl

sanitizer

Measuring jugs

Detergent

Balloon whisk

Oven/grill

Table spoon


Electric scale


Bain marie








1. Mise en place all ingredients, equipment, stations and stock

2. Bring vanilla and milk to boil

3. Combine eggs and sugar

4. Use HOT TO COLD METHOD (add the milk to the eggs)

5. Hint of cinnamon to taste

6. Stir constantly

7. Allow to cool then add to sweet pastry shell or used as desired
