Blancing Mussels

Ingredient

Blue board

1. Mise en place all ingredients, stations, equipment and utensils

2. Remove mussels from shell

3. Remove beard of mussel and all broken shells

4. Place in pot of boiling water

5. Blanch for 10 – 15 min

6. Remove mussel with spider

7. Strain off water

Chef’s tip

Remove mussels from cracked or broken shell for presentation purposes
