Roasted Drumsticks (Marinade)


Ingredients

Method

1. Rinse drumsticks well and cut off excess fat and pat dry

2. Combine lemon zest + juice, olive oil , thyme and salt and pepper in mixing bowl

3. Toss and coat drumsticks

4. Cover and set aside to marinate for 1-2 hours

5. Preheat oven to 180˚C

6. Arrange drumsticks in large shallo0w roasting pan

7. Pour the marinade over the chicken and cook through until golden brown for 1 ¼ hours

Chef’s tip

Could replace thyme olive oil lemon juice and zest with peri peri sauce
