Crumbed Garlic Mussels


Ingredients

Mussels

5kg

Butter

1kg

Onions

3ea

Garlic

120g

Bread crumbs

250g

Equipment used

Chemicals used

Green board

Sanitizer

Chef’s knife

Multi purpose

Table spoon

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Defrost mussels

3. Soften butter and place aside

4. Grate onions

5. Mix butter onions and garlic into mixing bowl

6. Add bread crumbs

7. Coat mussels with butter mixture

8. Place in oven 150˚ until crust is golden brown


Chef’s tip

Squeeze out any access liquid to prevent mussels from becoming soggy
