Colbert Sole

Method

1. Cut sole down the middle remove from bone

2. Open and dip in flour + breadcrumbs (seasoned and sifted)

3. Place prawns and cheese sauce in pot with lemon juice, garlic chives and cream

4. Deep fry crumbed sole until golden brown (3-4min)

5. Add prawns in the middle and capers

6. Thicken sauce with cream

7. Add sauce to sole

Chef’s tip

1. Use left hand for flour and right hand for bread crumbs

2. After adding flour and egg make sure to remove lumps from flour before crumbing

3. Parsley butter can also be used to fry in or as base of sauce

4. Gratinate in salamander to finish
