Red Pepper Reduction


Ingredients

Red peppers

Paprika

50g

Salt

To taste

Pepper

To taste

Red wine

200ml

Olive oil

80ml

Green board

Chef’s knife

1. Mise en place all ingredients, stations, equipment and utensils

2. Remove pips of red pepper

3. Place in roasting pan roast for 10-15min

4. Remove skin

5. Place in Robocoop

6. Add paprika, salt, pepper, red wine and olive oil


Chef’s tip

Can be served with meat dishes lightly drizzled over (see picture)
