Biltong Paste

Ingredients

Biltong

1kg

Butter

1kg

Cream cheese

200g

English mustard

150g

Herbs

20g

brandy

100ml

Equipment used

Chemicals used

Chef’s knife

Sanitizer

Robocoop

Multi purpose

Mixing bowl

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Soften butter to paste

3. Chop up biltong into fine pieces

4. Place soft butter into Robocoop

5. Add in mustard, brandy, herbs, cream cheese and biltong

6. Purify for 30 seconds until smooth paste

7. Place in grease paper and roll up

8. Place in fridge

Chef’s tip

Can be used to saute vegetables in

Slice of a thin slice once hardened and place on cooked steak/fillet (hot)
