Ingredients

Green board

Strainer

Shaving dish

1. Mise en place all ingredients, stations, equipment and utensils

2. Place cold water into pot

3. Add rice boil until cooked

4. Feel to touch (25-30min)

5. Brunoise peppers and mushrooms

6. Sauté in pan with oil and butter

7. Remove rice from stove

8. Strain off water

9. Place in shaving dish

10. Mix in sautéed peppers and mushrooms

Chef’s tip

Can add brunoised carrots or peas
