Lemon cheese cake filling

Ingredients

Quantity

Cream

1l

Lemon juice

100ml

Cottage cheese

1kg

Condensed milk

3 tins ea

Equipment used

Chemicals used

Mixing bowl

Sanitizer

Dough scraper

Multi purpose

mixer

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Whip cream until soft peak

3. Add lemon juice at the end of whipping

4. Mix in cottage cheese and condensed milk

5. Add cream to mix (add liquid to mix = light to heavy)

6. Place in fridge

Chef’s tip

Halve lemons, remove insides

Boil peel in sugar syrup for 10 min

Allow to cool fill peel with cheese cake filling

Place in fridge
