Wild Basil Pesto

Ingredients

Wild basil

700g

Olive oil

100ml

Crushed garlic

40g

Salt +pepper

To taste

Boiled potato

Multi purpose

Robocoop/liquefier

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Blanch wild basil

3. Boil potato, remove skin

4. Brunoise onion

5. Place all ingredients in Robocoop

6. Process until thick paste

7. Remove and allow to cool

8. Add salt and pepper to taste

Chef’s tip

Can use basil instead of wild basil
