Very hot water | 185ml |
Finely ground coffee | 2tbs |

1. Mise en place all ingredients, stations, equipment and utensils
2. Place finely ground coffee into very hot water
3. Allow to stand for 10 min
4. Remove coffee grounds +strain mixture
5. In heat proof bowl mix together egg yolks and sugar
6. Whisk until thick and pale
7. Whisk in milk and coffee
8. Place bowl over double boiler (not boiling water)
9. Cook until thick (4-6min) until it forms a layer on the back of the wooden spoon
10. Stir at all times
11. Remove from heat and allow to cool
12. Cover mix with film wrap/ grease paper to prevent from skimming
13. Place in fridge for at least 12 hours
14. Transfer to ice cream maker and place in freezer
