Kiwi and Fresh Mint Sorbet

Ingredients

Quantity

Well ripe kiwi’s

8ea

Sugar

250g

Fresh mint leaves

12ea

Mint liquer

50ml

water

200ml

Equipment used

Chemicals used

Balloon whisk

Sanitizer

Wooden spoon

Multi purpose

Mixing bowl

Oven/grill

saucepan

Stove top

Ice cream maker

1. Mise en place all ingredients, stations, equipment and utensils

2. Bring water mint and sugar to boil

3. Allow to cool –room temp

4. Place kiwi’s in Robocoop

5. Reduce kiwi puree with mint liquer

6. Mix all ingredients together

7. Place in fridge for at least 12 hours

8. Transfer mix into ice cream maker

9. Place in freezer

Chef’s tip

The appliance will change direction of rotation as soon as the mixture becomes compact , if this happens repeatedly the sorbet preparation is ready and can be place in the freezer in a sealed container for future use
