French Meringues

Ingredients

Egg whites

100g

Icing sugar

170g

Equipment used

Silicone sheet

Piping bag

Mixing bowl

1. Mise en place all ingredients, stations, equipment and utensils

2. Beat egg whites and ½ of the icing sugar until semi firm

3. Add remaining sugar and beat to firm, shining homogenous mix

4. Preheat oven to 100˚

5. Pipe meringue onto silicone sheet

6. Place baking tray into oven for 1 hour and 50 min

7. Leave to cool at room temperature

8. Leave on wire rack in a dry place

Chef’s tip

Makes 270g

For chocolate meringues use only 150g icing sugar add 30g unsweetened cocoa powder for the last minute of whisking
