Tomato Soup

Ingredients

Tomato paste

Whole black pepper

Margarine

Onions

Bacon

Potato

Brown sugar

Mixed herbs, paprika

to taste

30 l pot

Oven/grill

Stove top

1. Mise en place all ingredients, stations, equipment and utensils

2. Sauté onions and bacon in butter

3. Mirepoix vegetables

4. Place all ingredients in 30L pot

5. Boil for 30 min

6. Remove all solid ingredients with a spider

7. Mash potato

8. Place back in liquid

9. Boil for 20 min

10. Add spices to taste
