Pickeld Onions

Ingredients

Onions (small)

5kg

Balsamic

15ml per bottle

Sugar

10g

Vinegar

5l

Chili’s whole

2ea per bottle

Equipment used

Chemicals used

375ml bottles

Sanitizer

Table spoon

Multi purpose

Pairing knife

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Peal onions

3. Use 10 onions per bottle

4. Add 1 tbs of sugar

5. Add 15ml of balsamic (for color)

6. Fill bottle with vinegar add 2 chili’s per bottle

Chef’s tip

Brown vinegar can also be used

Sanitize bottles
