Tomato and onion relish

Ingredients

Spices (mixed herbs)

1. Mise en place all ingredients, stations, equipment and utensils

2. Mirepoix onions and tomatoes

3. Brunoise green pepper

4. Sauté onions and green pepper

5. Add tomatoes

6. Add paste

7. Add water enough to cover

8. Bring to boil

9. Add mixed herbs to taste

10. Boil until soft and mashed
