Gem Squash Soup

Ingredients

Quantity

Gem squash

3 bags

Cream

2 l

Chicken stock (see recipe)

2 l

Salt

To taste

Maizina

To thicken

Ground black pepper

To taste

30 l pot

Sanitizer

Chef’s knife

Multi purpose

robocoop

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Boil gem squash until soft

3. Remove pips

4. Remove from shell

5. Liquefy gem squash in Robocoop while adding 1 L of cream

6. Add the rest of the cream (1L)

7. Ann chicken stock

8. Place back in pot and boil until thick add maizina if necessary
