Guacamole

Ingredients

Lemon juice

Green pepper

Red pepper

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Finely brunoise onions, green pepper and red pepper

3. Open avocado remove pit and remove skin then Mash

4. Mix in brunoised peppers and onion

5. Add vinegar and lemon juice

6. Add salt and pepper to taste

Serves well as a dip or light snack on crout
