Roasted vegetables/potato/onions

Oil/butter

Mixed herbs

Roasting pan

Oven/grill

Green board

1. Mise en place all ingredients, stations, equipment and utensils

2. Mirepoix all vegs

3. Place in roasting pan

4. Add butter, oil and mixed herbs

5. Place in oven 180˚

6. Cook until soft or golden brown

7. Mix through every now and then

8. Feel to touch (25-30min)

Chef’s tip

Can use the same method for roasting onions and potatoes
