Pineapple and coconut sorbet


Ingredients

Quantity

Pineapple

400g

Malibu

100g

Coconut juice

250ml

Sugar

200g

Equipment used

Chemicals used

Chef’s knife

Sanitizer

Robocoop/masher

Multi purpose

Mixing bowl

Oven/grill

1. Mise en place all ingredients, stations, equipment and utensils

2. Place pineapple and Malibu in Robocoop

3. Melt sugar in coconut juice in sauce pan

4. Mix the 2 mixtures together

5. Place in fridge for minimum of 12 hours/over night

6. The next morning transfer mixture into ice cream maker
